School Days
Yes, yet again I have disappeared from my blog. I have been super busy getting my college orientation done, picking up my books, getting organized and started working on all my assignments for my online classes since they opened for preview last week.
The first official day of class is tomorrow but my only physical class isn’t until friday which is my 5 hour math class that I am not looking forward to at all. Maybe I should just start doing tumbler style posts instead so there will be something here lol.
Seven Days Into 2012
So it is seven days into 2012 and I haven’t blogged at all. Yes, I am a slacker! In all honesty I have been really busy trying to get all the lose ends in my life tied up before my classes start on January 23rd.
I have been trying to deal with unemployment to notify them that I am attending school. But, the people who I am supposed to make an appointment with aren’t returning my calls so if I don’t hear anything by Monday afternoon I will be calling them very pissed off.
Also, I had to get my dining room table set up as my desk because I will be needing lots of room for my textbooks, notebooks & laptop while working on my online classes. I got an email from school about the summer session so I went ahead and signed up for the next math class that I will need. Otherwise it would take much longer to get my degree since I need 4 math classes before I can take my required statistics classes.
I went and picked up a few 3 subject spiral notebooks, pencils & white out tape since I didn’t have any in my school supply stash that was left over from the supplies I got for Kidlet in September. I also bought 2 bags on clearance from Aero to use for school since I will only be going to school for one class and I don’t need a heavy duty bag. A pink tote bag for $10 and a blue messenger bag for $15.
I got emails from the two campus bookstores yesterday and today to let me know that my books are ready for pick up since my financial aid came through. So, I am hoping to get the book from one campus on Monday and the rest on Tuesday when I have to go to orientation. I know orientation would be boring if I wasn’t bringing my partner in crime Kat with me.
Plus, I have been trying to get the rest of my stuff organized, doing some self pampering (nails done, pedicure, hair dyed etc.) and squeezing in reading some smut books in before I am swamped with homework.
The End of 2011, The Beginning Of 2012
So what has happened in my life during 2011?
- Had major dental surgery.
- Took on running two stores & became the area manager’s helper.
- Finally became a store manager.
- Flew to Kentucky again to spend time with Jenn.
- Kidlet turned 13.
- Lost my job after almost 7 years due to all of the stores in the area closing.
- Started taking more pictures especially while cooking.
- Did lots of job searching without results.
- Enrolled in college for an Associates in Business Administration focused on human resources.
- Fell in love with the two red eared slider turtles that my Mom’s BF bought for her.
- Managed to be able to afford to get Kidlet what she wanted (actually needed) for Christmas (clothes & shoes).
What do I want to do or accomplish in 2012?
Offline:
- Purchase a desktop pc for all of my school work since I will be taking classes online mostly.
- Send Kidlet on her 8th trip to Washington DC.
- Start exercising 4-5 times a week.
- Pass all of my classes & have at least a 3.5 GPA
- Find at least a part-time job that pays decently.
Online:
- Take more photographs & update my photo site at least 3 times per week.
- Try to update my blogs at least 2 times a week (not including auto posts).

Eggnog
Original Recipe Yield 12 servings
Ingredients
- 4 cups milk
- 5 whole cloves
- 1/2 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 12 egg yolks
- 1 1/2 cups sugar
- 2 1/2 cups light rum
- 4 cups light cream
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground nutmeg
Directions
- Combine milk, cloves, 1/2 teaspoon vanilla, and cinnamon in a saucepan, and heat over lowest setting for 5 minutes. Slowly bring milk mixture to a boil.
- In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil. Strain to remove cloves, and let cool for about an hour.
- Stir in rum, cream, 2 teaspoon vanilla, and nutmeg. Refrigerate overnight before serving.
